Preheat the oven to 400°F. (If you have a convection oven, use a convection bake mode for even crispier chickpeas).
Place parchment paper on a standard baking sheet.
Drain and rise chickpeas, discarding all loose skins. Pat dry with a clean towel.
Mix all ingredients in a medium bowl.
Spread chickpeas on the baking sheet.
Bake for 15-20 minutes, until the chickpeas begin to crisp.

Pro Tips::Measure the olive oil first, then the honey. The honey will slide right off the spoon after being greased with the oil.Don't have parchment paper - these can be made directly on the sheet or on a silicone baking sheet but will not be as crispy.
