Cinnamon Honey Roasted Chickpeas.

A protein packed snack that is ready in a jiffy. I try to sneak homemade snacks in throughout the week when I can and these are so easy to whip up. And, it makes a few portions worth (unless your partner eats them all before the kiddos can). These are spiced so warmly and remind me of cinnamon roasted nuts that are always available around the holidays. Give them a try!

Equipment

  • Baking Sheet
  • Parchment Paper
  • Oven

Ingredients

  • 15 ounce can Chickpeas (Garbanzo Beans)
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Honey
  • 1 teaspoon Cinnamon
  • 1 pinch Salt

Instructions

  • Preheat the oven to 400°F. (If you have a convection oven, use a convection bake mode for even crispier chickpeas).
  • Place parchment paper on a standard baking sheet.
  • Drain and rise chickpeas, discarding all loose skins. Pat dry with a clean towel.
  • Mix all ingredients in a medium bowl.
  • Spread chickpeas on the baking sheet.
  • Bake for 15-20 minutes, until the chickpeas begin to crisp.

Notes

Pro Tips::
Measure the olive oil first, then the honey. The honey will slide right off the spoon after being greased with the oil.
Don’t have parchment paper – these can be made directly on the sheet or on a silicone baking sheet but will not be as crispy.
